I once was lucky enough to spend time with my dear friend Mari-Adelle and her mother–a true Italian grandmother from Napoli, Italy. Known to me as Nona, she lived to cook, and oh could she ever cook! Every morning she was in the kitchen by 6 am, and every evening we would sit down to a 15-course meal at 10 pm. It was truly the most fabulous home-cooked food I have ever had.
Even though we did not share a language, she shared her kitchen with me and let me learn by her side–it wasn’t so much about recipes as technique: how to salt the water for pasta, and how to check if it is al dente. How to choose good produce and how to balance tomatoes, basil, and garlic in any dish. My time in Nona’s kitchen has impacted my cooking ever since…and now it is my turn to bring Nona’s pasta to you!
