Jamie Almanzan descends from a proud line of true California Chicanos. His grandmother was known to say that she didn’t cross the border, but the border crossed her. From this heritage, Jamie learned to make savory, fresh, fragrant & well-seasoned foods. He cooks with passion and crafts with care; a lover of all he eats and a champion of the food he grew up enjoying in his grandparent’s home in East LA.
One of Jamie’s specialties is carne asada – a seemingly simple but remarkably complex dish of thin skirt steak marinated in lime, roasted jalapeños, herbs, & spices. For proper cooking, he lets the meat rest at room temperature before quickly searing it on the hot side of a wood-burning grill. He then chops and serves it up with traditional corn tortillas, lime, & fresh pico de gallo. With his carne asada, Jamie carries on a long family & cultural tradition that we all get to enjoy as this week’s Curious Dish.
