Our friend Carolyn taught us how to make her wonderful and authentic Armenian rice pilaf with rice, vermicelli, herb, spices and dried fruits. Rice pilaf is a common dish that stretches from Indian biryani to Spanish paella. But one of the most replicated versions cooked in the home comes from Armenia, which stands out uniquely for the vermicelli pasta, orzo or bulgur wheat often including in the dish. Did you know that Rice-a-Roni--"The San Francisco Treat!"--was inspired by Armenian immigrant Pailadzo Captanian? She served this favorite family recipe to a friend whose husband then used his pasta company to introduce Rice-a-Roni to the nation in 1958!
Carolyn is an Armenian-American from Fresno, California--the oldest Armenian community in the US stretching back to the 1870s when immigrants from the Armenian diaspora arrived to farm the fertile land of the Central Valley. In the US today, there are over one half million Armenian-Americans, mostly located in California making it the third largest Armenian community on earth! Since Armenians immigrants were dispersed across the Caucasus, Middle East and Southern Europe, Armenian-American cuisine has many different influences--strong tradition cultivated in the home with lots of fresh ingredients, hearty dishes, and wonderful slightly spiced herb-infused flavors!
