Butter Chicken is a classic Indian dish characterized by its smooth & creamy turmeric-tinted sauce of tomatoes, onions and a bevy of curry spices. This Curious Dish originated in New Delhi, India at the Moti Mahal restaurant in 1947, and has become a global favorite.

With over 300 widely-spoken languages, 2,000+ ethnic groups, and strong English & French colonial influences, Indian cuisine is the original definition of "fusion cooking."  

The word "chutney" derives from the Hindi word "caṭnī," meaning "to lick" or "to eat with appetite." Traditional chutneys preserve tart fruits with an equal amount of jaggery - a hard Indian sweetener that tastes similar to molasses, often including mustard oil or vinegar to pickle the fruit. Earl Grey tea leaves with pickled mango is the classic chutney used in this week's dish.
