Jamie Almanzan descends from a proud line of true California Chicanos--his grandmother was known to say that she didn't cross the border, but the border crossed her. From this heritage, Jamie learned to make savory, fresh, fragrant & well-seasoned foods. He cooks with passion and crafts with care--a lover of all he eats and a champion of the food he grew up enjoying in his grandparent's home in East LA. 

One of Jamie's specialties is carne asada--a seemingly simple but remarkably complex dish of thin skirt steak marinated in lime, roasted jalapenos, herbs & spices. For proper cooking, he lets the meat rest at room temperature before quickly searing it on the hot side of a wood-burning grill, and then letting it finish on the cool side. He then chops and serves it up with tortillas, lime & fresh pico de gallo. With his carne asada, Jamie carries on a long family & cultural tradition that we all get to enjoy as this week's Curious Dish.
